Why should the meat room be defrosted regularly?

Due to moisture, contained in a provision or introduced during cook's visits to the meat room, the ice tends to build-up on the evaporator.

Onboard refrigeration systems are normally equipped with automatic defrosting timers. However, evaporator should be regularly inspected for the ice formation and defrosted manually, as required.

Failure to do so may lead to the reduced thermal efficiency of the refrigeration system and cause a refrigeration compressor short-cycling. Ice may damage the evaporator fins and tubes.

If such damaged noticed, the crack should be repaired either permanently, by soldering or plugging the cracked tube, or temporarily, until permanent repair becomes possible. The easiest way to fix is to install a suitable hose clamp.
